Istrska Belica is an autochthonous olive cultivar of Slovenian Istria with Protected Designation of Origin (PDO), distinguished by an exceptionally high content of natural antioxidants, particularly polyphenols, which contribute to its pronounced sensory intensity and remarkable oxidative stability.
The oil exhibits a medium to intense fruitiness with dominant green attributes. On the nose, clear aromas of freshly cut grass, green tomato, tomato leaf, and green almond are present. On the palate, the oil opens with a mild initial sweetness, quickly transitioning into a well-defined bitterness and a persistent, harmonious pungency—hallmark characteristics of the Istrska Belica variety.
Chromatically, the oil presents a vivid green coloration in its early phase, gradually shifting toward golden-yellow tones as chlorophyll content decreases over time.
The olives are harvested exclusively from our own groves at optimal ripeness and processed within a few hours of picking in our private olive mill in Krkavče. This rapid milling ensures minimal oxidation, preserves volatile aromatic compounds, and allows for full expression of varietal character and terroir.
