Our story begins in 1992, when the Lisjak family established one of the first olive oil mills in Istria—laying the foundations for a legacy deeply rooted in tradition, craftsmanship, and an uncompromising pursuit of quality.

More than three decades later, in 2023, this heritage evolved into the creation of the Gregor Lisjak brand—a boutique expression of premium extra virgin olive oils, carefully crafted by Gregor Lisjak and his family. Each drop originates from our estate in Krkavče, where over 1,500 olive trees thrive in the distinctive microclimate of Slovenian Istria.

Our olives are harvested and processed within just a few hours using the cold extraction method in our own olive mill. This meticulous approach preserves the full spectrum of natural aromas, antioxidants, and vitality that define exceptional extra virgin olive oil.

Set in the sun-drenched hills of Krkavče—the very heart of Slovenian Istria—our groves yield oils of remarkable character. With naturally low acidity and a high polyphenol content, Gregor Lisjak extra virgin olive oils are celebrated not only for their refined sensory profile, but also for their nutritional richness and authenticity.

Our collection encompasses eleven distinctive oils, including our signature lines Selekcija, Kortina, and Istrska belica, alongside a curated range of infused creations such as Lemon, Orange, Garlic, Rosemary, Basil, Chili, Truffle, and the unique Olive–Pumpkin blend.

Beyond olive oil, we offer carefully prepared olives in brine and a selection of handcrafted olive wood products—each piece reflecting the same dedication to excellence and Mediterranean heritage.
